Chardonnay 50%, Pinot Noir 30% and Chenin 20% from Languedoc-Roussillon. Direct pressing, settling at 0° Long alcoholic fermentation (3 weeks - 1 month) at low temperature (15°) in temperature-controlled stainless steel vats. Aging period: 18 months.
