Mauzac 90%, Chardonnay 5% and Chenin 5%. Clay-limestone soil facing north, in order to preserve all of the acidity of Mauzac and Chenin. Vine cultivated on stony plateaus for the reflection of the sun during the day and the restitution of heat at night in order to obtain optimal maturity. Sparkling wine made from Mauzac, an emblematic grape variety of the Limoux region. In spring, its young leaves have white hues, hence the name “Blanquette”.
